Wild Rice and Chive Batardes is the second new recipe. A batarde is a loaf of bread that is slightly thicker, but shorter than a baguette. This recipe makes two small loaves. Ingredients: 4 cups bread flour, 1 tablespoon quick-rise or rapid-rise dry yeast (two 1/4-ounce envelopes, yeast is located above flour in the supermarket), 1 tablespoon brown sugar, 2 1/4 teaspoons coarse salt, 1 cup plus 2 tablespoons water, 1/4 cup buttermilk, 1 cup cooked wild rice, drained and cooled, 1/2 cup chopped fresh chives, (about 3 large bunches), nonstick vegetable oil spray and for glaze 1 large egg white, beaten with 1 tablespoon water.
