The Gewurztraminer reduction glaze we employed this year is super straightforward along with a nice compliment to the flavor of the game hens. I picked at random a Gewurtz from Trader Joes and was pleasantly surprised by the wine from Bridgeview in Cave Junction, Oregon. It was rather dry but still had the wonderful spicy profile Gewurtz is known for. We glazed the birds and enjoyed the rest of the bottle with dinner, which paired well with not only the birds but the cranberry and wild rice stuffing, whiskey and walnut cranberries, and sweet potato zaatar soup.
