Whole wheat sourdough bread is a type of bread, which does not contain yeast. This bread has a sour taste as compared to the yeast containing bread. Sourdough is dough that contains lactobacillus cultures; it is particularly used in baking rye-based bread. The sour taste in this bread is due to the lactic acid present in the lactobacillus. Sourdough bread is made with the help of small amount of starter dough, which is also known as the mother dough and it contains culture and mixture of wheat with water. A sourdough starter is typically a culture of yeast and bacteria, which is present in the mixture of water and flour. A starter consists of items like bread flour, water, sourdough starter and rye- flour; all these can be easily available in grocery.

Fresh flour contains a huge variety of bacteria spores and yeast. There are assorted ways to increase the ability to make a stable culture. Sourdough starter is helpful in making other recipes such as waffles, cakes, cookies, hotcakes etc. Some amount of sourdough is mixed with the bread dough and is allowed to rise as normal. The other method of making sour dough is common as making pan cakes or quick breads; baking soda is used to neutralize all the acid present in the starter and this technique is common in kitchen where starter is kept off balance. There are several ways to make whole wheat sourdough bread, one of the ways discussed below.

Ingredients- 3\4cup of water, light olive oil tablespoon, 3/4 cup Whole wheat sourdough bread starter, 1 1/2 table spoon honey, 1 1/4 tsp salt, 2.6 cups wheat flour and 2.6 cups vital wheat gluten(optional).

The first step is to heat the oven before using; it should be heated at 375 degrees. Now, place the starter in a big bowl and add honey, warm water, salt, yeast and oil; mix all the ingredients with an electronic mixer. Add one cup of wheat flour and bread flour, and mix it for 5 min. The next step is to add one more cup of bread flour and wheat flour along with flex seeds and wheat germ, and mix the ingredients and form dough from the mixture.

Stretch the dough on the dry surface sprinkled with flour. Knead the dough until it becomes smooth and elastic. Put the dough in a greased bowl after kneading it and cover it with a towel and leave it at a warm room temperature for 45 minutes until it doubles in quantity or increases in size. Then after 45 minutes remove the dough from the bowl and divide it into two halves. After dividing the dough, give it a loaf shape and place it on greased loaf pan. Bake loafs until they are golden brown in color for approximately 35 minutes.

Whole wheat sourdough bread is perfect for making sandwiches as sourdough bread is clammy from inside and it has a heavy crust. So, make sourdough bread and enjoy the yummy sandwiches.
